For some reason I am feeling especially emotional this Thanksgiving. My life is awesome, and I am so grateful for all the amazing people in my life! Holidays like this make me miss the people that aren’t around though… Family and friends back in Minnesota and in all corners of the globe. Sending love your way!!!!
When you’re feeling sad sometimes the best thing to do is gorge yourself, and thank goodness Thanksgiving is all about food! I made pumpkin pie cupcakes in advance based off Everyday Paleo’s pumpkin pie recipe, but I actually used fresh pumpkin (cut two pumpkin pie pumpkins in half and steamed them in the oven, scraped into Ninja and pureed) and obviously I turned them into cupcakes instead of pie!
When I was young and we had Thanksgiving at my grandparent’s house, my grandma would always make whipped cream by hand- whipping the cream (sometimes I would help!) and adding powdered sugar. I remembered this and altered it a bit – organic whipping cream and honey! A lot of work, but these turned out absolutely delicious. It was dark out when I was making the cupcakes so I didn’t shoot any photos of the process, but here is the whipped cream and assembly!
