Of course Detective Karen knew about the shower… I wasn’t happy about that, but there was nothing that could be done at that point. Six months of planning finally came to fruition with a fantastic event- lots of people, food, and of course, presents!

Flashback Friday: Remember When the Girls Were this Young?

On Friday, Luke was rearing to get back on the mountain, but my neck was all kinds of messed up from a nasty tumble at Keystone the day before. We headed to Breckenridge, a nice ski town nearby. Breck has a “Gold Runner Coaster,” a little roller coaster with individual seats where you can control your own speed. We decided to try it out… it ended up being not so exciting, but pretty unique! Luke shot a video on the GoPro, maybe I’ll do a blog post with a bunch of his videos when I get them.

After the roller coaster, Megan and I headed into town while Luke hit the slopes. Breckenridge has lots of little shops and restaurants, so we had plenty of things to do with our time!

There is a tattoo parlor on the main drag, and Megan wanted to get a tattoo that she had been planning for a long time, so we headed in, had a tattoo artist draw up some sketches, and made an appointment for later that day!

Luke met up with us and we went for some food at the Breckenridge Brewery, then went up to a lookout on a nearby mountain where we could see Breck.

We went back to the tattoo place, and they said they could not fit us in. What the crap kind of business takes reservations and does not honor them?! The correct response to a customer is, “Sorry, we cannot accommodate you at the time you want today.” Booooo. We left, and dipped into a grocery store to grab some toe warmers and dinner to cook back at Meg’s place.

Friday, we went to Vail!

Vail was huge and gorgeous, and that’s when the elevation really hit me. At the top of the mountain I couldn’t breathe well and was very overwhelmed, and just did not want to snowboard anymore (what a baby, right?). It took a while, but I finally convinced Meg and Luke to drop me off at a lodge, where I collected myself and let them go wild. They came back a couple hours later and I did a couple more little runs, but was ready to get off the mountain. I took a chairlift down to the main lodge, passing directly over the park where talented athletes were gearing up for the Teva Mountain Games!

Something that infuriates me is when I am in an extremely photogenic situation, and I have no camera. Alas, my snowboard cannot shoot photos! All I had was my crappy little phone, and I looked at the Nikon D3x shooter beside me with envy. I did the best I could, dying battery and all…

The first event (and only event I actually got to see) was mountain biking! Apparently this is the first time it had been done, and the athletes were bikers, not winter sports guys. It was pretty amusing seeing them slip and slide down the mountain, despite their big snow tires!

A bit later Luke and Megan were done on the mountain, and we wandered around Vail Village for a little bit, where Megan got attacked by a polar bear.

On our way back to Meg’s place in Keystone, I marveled at how the roads seemed to go straight into the mountains…

I don’t think I ever really recovered from the altitude, but the trip was amazing anyway! The towns are quaint and the sights are beautiful- I can see why people move to the mountains and never want to come back to the rush rush of the flat lands again!

For the last few winters, my best friend of many many years has made the journey to Keystone to live a new, adventurous life as a ski instructor. After finishing grad school over the summer, she made the jump to be a year-round resident up in the mountains! Luke and I had wanted to visit for a while, but last year I used up all my vacation time with the wedding so once the new year rolled around, we booked our tickets!

Megan picked us up in Denver on Wednesday, and after stopping for lunch at Tokyo Joe’s (awesome) we started the climb up into the mountains. View of Denver from a lookout:

Then drove up above the tree line to experience the thin air at the Continental Divide:

We were exhausted by the time we arrived at Megan’s sweet pad, and rested up for a day on the mountain! Thursday we headed to Keystone where Megan works as a ski instructor to little kids. I might as well have been a little kid with my snowboarding skills, but I made great improvement! I didn’t want to risk destroying my camera in the snow, but here are a couple shots of us feeding the Keystone ducks…

Spinach, Grape Tomato & Angel Egg Omelette

Obviously I am so excited about the new kitchen that I am shooting photos of not-so-exciting food… I did actually go home during lunch today to grab a couple things I had forgotten- it is so nice to see the animals and the hubby in the middle of the day!

I made a quick, delicious and nutritious lunch while I was home… Kerrygold butter, spinach, grape tomatoes, and three angel eggs!

Paleo Roasted Eggplant & Tomato Caviar

With the kitchen renovation underway, I couldn’t cook much in the last few weeks. It is almost complete now, though! Luke and I spent the majority of the weekend cleaning and organizing, and there are just a few things left to do. I have been bringing wine to girls nights every week since my kitchen was out of order, so I was excited that I could finally bring something else! I decided to bring an appetizer and got inspired by a recipe I saw for “poor man’s caviar” made with eggplant. I decided to add roasted tomatoes since I had a bunch of grape tomatoes in the fridge, and I think it really added a nice flavor. Here it is…

Ingredients:

  • 1 whole eggplant
  • 1 pint grape tomatoes
  • 1 clove fresh garlic
  • Olive oil
  • Basil
  • Salt and pepper to taste

Directions:

  1. Preheat your oven to 450˚F
  2. Cut slices into eggplant to vent while roasting, then place eggplant in oven for about 45 minutes, or until skin becomes dark and wrinkled
  3. Chop garlic and cut tomatoes in half
  4. Drizzle olive oil into baking pan, then add tomatoes and garlic. Stir to coat with oil, then sprinkle with basil, salt and pepper to taste
  5. Put baking sheet in oven to roast
  6. When eggplant and tomatoes are roasted, remove from oven and allow to cool until you can handle them
  7. Remove skin from eggplant and place in Ninja or food processor, along with about half the roasted tomatoes and garlic, and puree
  8. Transfer puree to serving dish and add remaining tomatoes, garlic and oil and mix
  9. Serve with nut crackers (shown below) or vegetables for dipping

Bill and Holly, Ready to Pop!

Last summer I had the pleasure of attending Bill & Holly’s wedding, and since then there has been some progression! They recently moved closer to us in New Jersey, and are expecting their first child, a baby girl they plan to name Lily Marie!

A week before Holly’s due date we got together for a photo session. Holly wore my too-small-for-a-big-pregnant-belly shirt, and we got a lot of great shots of not only her belly, but of all the love that is in their growing family! Here are some of my favorites…
